House of Bungalow is a new hospitality destination opening in the heart of Surry Hills.
The venue brings together a daytime café, an elevated restaurant and a late-night basement experience under one roof. Each space has its own identity, but all are connected by thoughtful hospitality, strong design, great food, music and atmosphere.
We are now looking for a capable and hands-on Assistant Restaurant Manager to support the Restaurant Manager in launching and operating our 80-seat ground-floor restaurant.
This is a key leadership position within the restaurant. You will help lead the front-of-house team, maintain service standards and ensure each shift runs smoothly. The role suits someone ready to take on greater responsibility while still being highly present on the floor.
The Role
Working closely with the Restaurant Manager, you will help oversee the restaurant’s day-to-day service and operations.
Your responsibilities will include:
- Supporting the Restaurant Manager across lunch, happy hour and dinner services
- Leading the floor and coordinating the front-of-house team during service
- Conducting pre-service briefings and ensuring the team is prepared
- Maintaining consistent service, presentation and hospitality standards
- Creating a welcoming, polished and memorable guest experience
- Assisting with recruitment, onboarding, training and development
- Coaching team members and providing clear feedback during and after service
- Managing reservations, walk-ins, table allocation and guest flow
- Responding professionally to guest feedback and resolving issues
- Assisting with rosters, timesheets and labour management
- Completing opening and closing procedures
- Supporting cash handling, POS reconciliation and daily reporting
- Monitoring beverage, consumable and front-of-house stock levels
- Coordinating with the kitchen, bar and broader leadership team
- Supporting events, group bookings and high-energy weekend services
- Ensuring compliance with RSA, food safety, workplace safety and venue procedures
- Acting as the senior restaurant leader when the Restaurant Manager is unavailable
About You
You are confident, organised and calm under pressure. You understand that strong hospitality is not only about completing service — it is about reading the room, anticipating what guests need and helping the team perform at its best.
You will ideally have:
- Previous experience as an Assistant Restaurant Manager, Duty Manager, Restaurant Supervisor or senior section waiter
- At least two years of experience in a quality, high-volume restaurant or hospitality venue
- Strong floor-management and service-coordination skills
- Experience leading, training and motivating front-of-house teams
- Strong wine knowledge and confidence discussing and recommending wine to guests
- Previous experience working with curated wine lists, wine service and food pairing
- The ability to support and train team members on wine knowledge and service standards
- A genuine interest in food, wine, cocktails and contemporary hospitality
- Strong communication and problem-solving skills
- The ability to stay composed and make decisions during busy services
- Excellent attention to detail and personal presentation
- Confidence using reservation and point-of-sale systems
- A current NSW RSA
- Full Australian working rights
- Availability to work evenings, weekends and public holidays as required
Experience with venue openings, premium casual dining, shared-plate restaurants, events or high-energy weekend trade will be highly regarded.

Restaurant Operations
House of Bungalow trades Tuesday to Sunday, with lunch, happy hour and dinner service.
The restaurant is designed to move through different moods across the day — from relaxed lunches and afternoon drinks to energetic dinners, celebrations and weekend dining.
This is a hands-on operational role and will include a combination of daytime, evening and weekend shifts.
