Location: George Street, Sydney
A new kind of hospitality experience is coming to George Street.
We're creating a venue that brings together exceptional coffee with an intimate bar experience. Open seven days a week, the venue evolves from a vibrant daytime café into an evening destination, where coffee remains at the heart of everything we do—including a cocktail program inspired by coffee.
This isn't about choosing between café or bar. It's about creating something entirely new.
We're looking for an experienced Venue Manager to lead this exciting new concept from day one.
The Opportunity
As our Venue Manager, you'll be responsible for bringing the vision to life and leading every aspect of the operation. This is more than managing an existing venue—it's an opportunity to build one.
From recruiting your leadership team to shaping the guest experience and creating a culture of excellence, you'll have genuine ownership and influence over the success of the venue.
You'll be responsible for:
- Leading the day-to-day operation across café and evening trade
- Recruiting, onboarding and developing both café and bar teams
- Hiring and mentoring your own support Bar Managers and leadership team
- Building a positive, high-performing culture from the ground up
- Driving financial performance and delivering key business KPIs
- Contributing to menu development and the ongoing evolution of the guest experience
- Maintaining exceptional standards in food safety, beverage quality and service
- Creating a venue that reflects the innovation, quality and hospitality Toby's Estate is known for
About You
You'll be an experienced hospitality leader who thrives in dynamic environments and enjoys building teams, developing people and creating memorable guest experiences.
You'll bring:
- Proven experience as a Venue Manager or Senior Manager in a café, restaurant, premium casual dining or boutique bar environment
- Outstanding leadership and people management skills
- Experience recruiting, coaching and developing high-performing teams
- Strong commercial acumen with experience managing KPIs, labour, costs and profitability
- Confidence leading both operational excellence and guest experience
- The ability to make decisions, solve problems and lead from the front
- Creativity, initiative and a passion for building something new
- Flexibility to work across both day and evening trade as required
- Availability to work at least one weekend day as part of your regular roster
