Picoso Mexican Cucina is a brand-new waterfront restaurant preparing to open at the iconic Hillarys Boat Harbour. Combining vibrant Mexican flavours, premium ingredients, and exceptional hospitality, we are creating one of Western Australia’s most exciting dining destinations.
We are seeking an experienced and passionate Head Chef to join us ahead of opening and play a pivotal role in building the kitchen, developing the team, and establishing the standards that will define our success.

About the Role
As Head Chef, you will take full ownership of the kitchen operation, leading menu execution, team development, food quality, and financial performance.
You will work closely with ownership to deliver a menu that balances creativity, consistency, and profitability while maintaining the highest standards of food quality and kitchen operations.
This is a hands-on leadership role for a chef who thrives in a fast-paced environment and takes pride in building strong teams and efficient systems.
Key Responsibilities
- Lead and manage all kitchen operations
- Recruit, train, mentor, and develop kitchen team members
- Ensure exceptional food quality, consistency, and presentation standards
- Manage food costs, labour costs, stock levels, and wastage
- Maintain strong kitchen systems and operational procedures
- Manage supplier relationships, purchasing, and inventory control
- Ensure compliance with all food safety, hygiene, and workplace health and safety requirements
- Drive kitchen performance and profitability through effective cost management
- Collaborate with management on menu development and seasonal offerings
- Create a positive, professional, and high-performance kitchen culture
What We’re Looking For
- Proven experience as a Head Chef or an accomplished Sous Chef ready to take the next step
- Strong leadership and people management skills
- Experience managing high-volume restaurant operations
- Excellent understanding of food costing, labour management, and kitchen financial performance
- Passion for delivering exceptional food and guest experiences
- Strong organisational and communication skills
- Ability to remain calm and effective under pressure
- Sound knowledge of food safety and compliance requirements
- Experience with Mexican, Latin-inspired, or modern casual dining concepts is highly regarded but not essential
