Key Duties and Responsibilities
The successful applicant will perform duties consistent with ANZSCO 351211 – Butcher, including:
- Preparing meat for sale by removing bones, trimming fat, and cutting, slicing, mincing, and grinding meat to required shape and size for display or customer orders
- Preparing crumbed meat cuts and marinating, seasoning, and curing specialty meat products
- Selecting and preparing meat for the production of smallgoods, including sausages and cured meats
- Operating machinery to grind, mix, mince, tenderise, and process meat products
- Preparing seasonings, marinades, and pickling mixtures by combining spices, salt, and other ingredients
- Operating sausage filling machines, smoking chambers, cooking kettles, and related processing equipment
- Ensuring proper storage, rotation, and handling of meat products in compliance with food safety standards
- Maintaining cleanliness of work areas, equipment, and display cabinets in accordance with WHS and food hygiene regulations
- Advising customers on different meat cuts, preparation methods, and suitability for various cooking techniques
- Assisting in stock control, ordering, and monitoring meat inventory levels
- Assisting in production planning and estimating quantities required to meet customer demand
Skills and Experience Required
- Relevant AQF Certificate III including at least two years of on-the-job training, or
- At least three years of relevant work experience as a Butcher
- Strong knowledge of meat preparation techniques and smallgoods production
- Ability to operate commercial meat processing equipment safely
- Sound understanding of food safety, hygiene, and WHS requirements
- Good communication skills and customer service ability
AUD 76,515 per year + superannuation
Pay: $76,515.00 per year
