We feature live music every night, serve an extensive range of cocktails – including our famous fishbowls – alongside ice-cold draught beer, alcohol-free options, and a menu designed to cater to a wide variety of guests. We also operate a gaming room, making us a diverse hospitality venue with something happening at all times.
Our kitchen is at the heart of the venue, delivering consistent, high-quality meals across breakfast, lunch and dinner service in a fast-paced environment. The team works closely together to ensure food is prepared and served efficiently while maintaining strong standards of presentation, consistency and food safety.
As an entirely outdoor venue in the Top End, you’ll be working in tropical conditions year-round. The climate can be hot and humid, particularly during the build-up and wet season. We are looking for people who are comfortable working in these conditions while maintaining a positive attitude and contributing to a productive kitchen environment.
About the Role:
We are seeking an experienced and motivated Chef to join our kitchen team. In this role, you will be responsible for planning, preparing and cooking high-quality meals while maintaining exceptional standards of food quality, presentation, hygiene and safety. You will work closely with the kitchen and front-of-house teams to ensure the efficient delivery of food service and contribute to the ongoing success of our venue.
Your responsibilities will include:
- Assisting with planning menus and determining food quantities and production requirements.
- Preparing and cooking a wide range of menu items in accordance with recipes, venue standards and customer requirements.
- Completing food preparation and mise en place prior to service.
- Monitoring food quality, presentation, portion control and consistency throughout service.
- Managing food preparation and coordinating workflow during busy service periods.
- Assisting with stock control, ordering, receiving and maintaining inventory of food and kitchen supplies.
- Monitoring food storage, stock rotation and minimising waste in accordance with food safety requirements.
- Collaborating with management to develop new menu items and improve existing recipes.
- Providing guidance, training and support to Cooks, Kitchen hands and junior kitchen staff.
- Coordinating with front-of-house staff to ensure efficient food service and customer satisfaction.
- Maintaining a clean, organised and safe kitchen environment.
- Ensuring compliance with food safety, hygiene, workplace health and safety and venue policies and procedures.
- Contributing to a positive and collaborative team environment.
- Performing other kitchen duties as required to support the efficient operation of the business.
About You:
The successful applicant will have:
- At least three years of relevant experience as a Chef, or an AQF Diploma, Advanced Diploma or Associate Degree, or equivalent qualification in Commercial Cookery.
- Demonstrated experience preparing and cooking a wide range of high-quality meals in a commercial kitchen.
- Sound knowledge of menu planning, food preparation, cooking techniques and kitchen operations.
- Experience monitoring food quality, presentation, portion control and consistency.
- Experience supervising, training or mentoring junior kitchen staff.
- Knowledge of stock control, ordering, inventory management and food cost control.
- Strong understanding of food safety, hygiene and workplace health and safety requirements.
- Excellent organisational and time management skills with the ability to perform efficiently during busy service periods.
- A positive attitude, strong work ethic and the ability to work independently and as part of a team.
- A current Food Safety Certificate.
