We're a premier heritage hospitality venue dedicated to delivering authentic culinary experiences and large-scale cultural events. We are currently seeking an experienced and hard-working Cook to join our busy kitchen team. This role requires excellent hands-on culinary skills, a strong work ethic, and the ability to maintain high quality during peak festival periods.
Key Duties and Responsibilities
In this role, your primary focus will be the hands-on preparation and cooking of meals for our patrons. Your core duties will include:
- Examining foodstuffs to ensure optimal freshness and quality before preparation.
- Regulating the temperatures of ovens, grills, fryers, and other commercial cooking equipment.
- Preparing and cooking food, with a specific focus on authentic traditional cuisine, including roasts, specialty meats, and classic side dishes.
- Seasoning food accurately during the cooking process.
- Portioning food, placing it on plates, and adding gravies, sauces, and appropriate garnishes.
- Storing food safely in temperature-controlled facilities and ensuring all stock is rotated correctly.
- Preparing specific food items to meet special dietary requirements and allergy requests.
- Maintaining a clean, safe, and hygienic work area in accordance with health and safety regulations.
Skills and Experience Required
- An AQF Certificate III in Commercial Cookery (including at least two years of on-the-job training), OR an AQF Certificate IV in Commercial Cookery (or equivalent qualification).
- Alternatively, at least 3 years of relevant, full-time commercial cooking experience may substitute for formal qualifications.
- Demonstrated hands-on experience operating in a high-volume, fast-paced kitchen environment.
- Knowledge of, or experience cooking, traditional Central European or German cuisine.
- A strong understanding of food safety and hygiene standards.
This is a salaried position paying $80k to $85k per annum (excluding superannuation), dependant on skills & experience.
