Hotel Grand Chancellor Brisbane has an exciting opportunity for an experienced and passionate Head Chef to lead our kitchen team and play an active, hands on role in daily operations. This position is ideal for a chef who enjoys being on the tools, leading by example, and thriving in a fast paced hotel environment encompassing in room dining, buffet breakfast service, à la carte dining, and a high volume banquet and events operation.
As Head Chef, you will be responsible for delivering high quality food experiences, maintaining strong kitchen standards, and fostering a positive and professional team culture. We are looking for someone who is passionate about cooking, enjoys mentoring others, and is motivated to be an integral part of service every day.
Reporting to the Operations Manager, you will oversee the day to day kitchen operations while remaining actively involved in service, preparation, and team development. You will work collaboratively across departments to support business objectives and enhance the hotel’s food and beverage offering.
Lead and work alongside the kitchen team during daily service
Maintain high food quality, consistency, presentation, and service standards
Drive menu development, seasonal updates, and ongoing dish improvements
Manage food costs, stock control, labour budgets, and weekly rosters
Mentor and support junior chefs, helping build a positive kitchen culture
Ensure kitchen operations comply with food safety and hygiene legislation
Monitor stock levels and ordering to ensure smooth service operations
Maintain cleanliness and organisation of kitchen equipment and work areas
Work collaboratively with hotel management and front of house teams
Adapt to guest requests and operational requirements with a flexible approach
To be successful in this role, you will demonstrate:
A strong hands on approach with a passion for cooking and leading from the front
Proven experience as a Head Chef or Senior Sous Chef in a busy hotel, restaurant, or large scale hospitality environment
Strong leadership and communication skills
Excellent time management and organisational ability
The ability to remain calm and focused under pressure
A genuine passion for food quality, presentation, and guest satisfaction
Experience managing food costs, labour, and kitchen operations
Flexibility to work across a rotating roster, including weekends and public holidays when operationally required
