The Sous Chef position supports the Head Chef in the day-to-day operation of the kitchen, ensuring the consistent delivery of high-quality food while maintaining food safety, hygiene, and operational standards. The role includes supervising kitchen staff, assisting with menu planning, stock control, food preparation, and maintaining a safe and efficient kitchen environment.
Key Responsibilities
- Assist with planning and developing seasonal menus in consultation with the Executive Chef.
- Estimate food and labour costs and assist with ordering food and kitchen supplies.
- Monitor food quality at all stages of preparation, cooking and presentation to ensure consistency and high standards.
- Prepare, cook and present meals in accordance with recipes, menu specifications and customer expectations.
- Supervise and coordinate kitchen operations during service.
- Discuss food preparation and kitchen operations with management and front-of-house staff to ensure efficient service.
- Demonstrate cooking techniques and provide guidance and training to kitchen staff.
- Ensure compliance with food safety, hygiene and workplace health and safety legislation.
- Monitor stock levels, rotate stock and minimise food wastage.
- Assist with rostering and maintaining efficient labour levels.
- Support the recruitment, induction and training of kitchen staff.
- Maintain cleanliness and organisation of all kitchen areas and equipment.
- Assist with preserving and storing food using appropriate methods, including chilling and freezing where required.
- Act in the capacity of the Executive Chef during periods of leave or absence.
Skills & Experience
- Relevant commercial cookery qualification (Certificate III or IV in Commercial Cookery or equivalent).
- Minimum four years' experience working in a busy commercial kitchen.
- Strong knowledge of food safety and hygiene standards.
- Excellent organisational and time management skills.
- Ability to supervise and motivate a kitchen team.
- Ability to work efficiently in a fast-paced environment.
- Strong communication and teamwork skills.
Pay: $79,499.00 – $89,152.09 per year
