Kisuya Japanese Restaurant, located in Bathurst in Central West NSW, is seeking an experienced and motivated Full-Time Chef to join our team.
As our business continues to grow, we are looking for a reliable chef who can work efficiently in a busy kitchen environment while maintaining consistently high standards of food quality, presentation and hygiene.

Key Responsibilities
- Prepare and cook high-quality Japanese dishes according to restaurant standards.
- Prepare ingredients and food items required for daily service.
- Follow recipes, portion controls and presentation standards set by the restaurant.
- Maintain consistent food quality, taste and presentation.
- Assist with developing new dishes, seasonal specials and menu improvements.
- Select and use quality ingredients to achieve the best flavour and presentation.
- Organise and coordinate food preparation and cooking during service.
- Ensure all meals are prepared accurately and in a timely manner, particularly during busy periods.
- Set up and maintain kitchen stations according to restaurant guidelines.
- Monitor stock levels and determine appropriate quantities of food and ingredients to order.
- Assist with stock control, food rotation and minimising food waste.
- Receive and check food deliveries for quality and freshness.
- Ensure ingredients are stored correctly and in accordance with food safety requirements.
- Train, coach and support junior chefs and other kitchen staff.
- Assist with supervising kitchen staff and coordinating duties during service.
- Work closely with other chefs, kitchen staff and front-of-house staff to ensure smooth restaurant operations.
- Prepare dishes for customers with food allergies, dietary requirements or intolerances with appropriate care.
- Follow all food safety, hygiene and sanitation procedures.
- Maintain a clean, organised and safe kitchen and workstation at all times.
- Properly use, clean and maintain kitchen equipment.
- Follow workplace health and safety procedures and report any hazards, accidents or incidents.
- Ensure correct quantities of food are prepared to meet expected daily demand.
- Remain productive during quieter periods by preparing for upcoming services and maintaining kitchen organisation.
- Assist with opening and closing kitchen procedures as required.
- Monitor food quality and identify any issues before dishes are served to customers.
- Maintain a professional attitude and contribute positively to the kitchen team.
- Keep up to date with Japanese food trends, cooking techniques and industry practices.
- Perform other reasonable kitchen duties as required by management.
Requirements
- Minimum 3 years of relevant commercial kitchen experience.
- Experience in Japanese cuisine is highly regarded.
- Strong knowledge of food preparation, cooking techniques and kitchen operations.
- Good understanding of food safety and hygiene requirements.
- Ability to work efficiently and accurately in a fast-paced environment.
- Ability to work independently as well as part of a team.
- Strong organisational and time-management skills.
- Reliable, responsible and able to maintain consistent standards.
- Ability to communicate effectively with other kitchen and restaurant staff.
- Flexibility to work across a rotating roster, including evenings, weekends and public holidays as required.
