Hamilton Island is seeking a passionate and motivated Chef de Partie to join the team at Sails Restaurant, our family-friendly venue located poolside with stunning views of Catseye Beach. As Chef de Partie, you’ll be responsible for a section of the kitchen and ensure quality, consistency, and efficiency across service. You’ll support the Sous and Head Chefs in managing daily prep, coordinating service, and maintaining food safety and hygiene standards.

Prepare and cook across buffet breakfast and à la carte lunch/dinner

Take ownership of a kitchen section and deliver consistent food quality

Rotate through grill, larder, garnish, and other sections as required

Maintain hygiene, safety, and kitchen cleanliness protocols

Support with prep, ordering, stock rotation, and mise en place

Mentor junior chefs and assist with kitchen organisation

Collaborate with the team to deliver a seamless guest experience
You are a reliable and focused chef who thrives in a fast-paced kitchen. You take pride in delivering high-quality food at scale and enjoy working in a collaborative, high-performing team.

Certificate III in Commercial Cookery (Essential)

2–3 years’ experience in a busy à la carte or buffet kitchen

Strong understanding of modern Australian cuisine

Ability to run a section and work under pressure

Sound knowledge of WH&S and food safety practices

Strong communication and teamwork skills

Professional grooming and personal presentation

Flexible attitude toward shifts, including weekends and public holidays
