Reporting to the Restaurant Manager, you will lead from the floor, inspire a high-performing team and play a key role in delivering the world-class service, operational excellence and memorable experiences that define the NOBU brand.

In this role, you will:
Support the day-to-day operation of NOBU, ensuring exceptional service and seamless venue execution.
Lead, coach and develop a high-performing front-of-house team to deliver world-class guest experiences.
Drive operational excellence through effective labour management and service leadership.
Support financial performance by identifying revenue opportunities and managing costs.
Partner with the Restaurant Manager to maintain premium service standards, compliance and operational efficiencies.
Be a custodian of NOBU's world class culture, driving team engagement, performance, recognition and development to create an exceptional environment for both employees and guests.
Lead by example during peak service periods, ensuring every guest experience reflects the prestige of the NOBU and Crown brands.
About You
You are a passionate hospitality leader with experience in premium dining, luxury hotels or high-volume hospitality environments. You thrive in fast-paced settings, lead with confidence and are committed to delivering exceptional guest experiences.
You will also bring:
Demonstrated managerial leadership experience within a premium restaurant, hotel, or luxury hospitality environment, with five-star experience highly regarded.
Proven ability to lead, coach, and develop high-performing teams while fostering a culture of excellence and accountability.
Strong commercial acumen, with a sound understanding of labour management, operational efficiency, and overall business performance.
Exceptional communication, stakeholder engagement, and organisational skills, with the ability to build effective relationships across all levels.
A genuine passion for hospitality and service excellence, coupled with a commitment to creating memorable and personalised guest experiences.
Current Responsible Service of Alcohol (RSA) certification.
