Laundy Hotels are seeking exceptional Head Chefs to join our team in the
Illawarra, at the
Plough & Ale Inn and/or
Albion Park Hotel
A recently launched haven that embodies warmth and hospitality, the
Plough & Ale Inn is designed with the community in mind. Nestled in the vibrant new suburb of Calderwood in the Illawarra region, it serves as a welcoming destination for all.
Albion Park Hotel or Park Pub as it is more commonly known by the locals, boasts two bar areas, an awesome TAB facility and 2 spacious beer gardens. The Park Pub is for everyone both young and the young at heart.
THE OPPORTUNITY
As Head Chef, you'll lead a team dedicated to delivering excellence in every dish. You will be responsible for but not limited to:
- Delivery of exceptional food and service, ensuring a high standard of consistency and quality
- Take full accountability for food cost, wages and margin performance
- Navigate highly variable trading patterns with foresight and control.
- You'll need to think like an operator, not just a chef.
- Enforce stock discipline, ordering accuracy and labour efficiency
- Conduct audits, address gaps and raise standards, not just report them
- Maintain food safety and compliance without them becoming the focus
- Lead a large, diverse kitchen team that requires strong, steady presence
- Recruit, develop and retain senior chefs
- Set expectations clearly, and hold people to them
- Build a culture where standards don't dip when you're not in the room

As a driven, passionate, energetic, and focused individual you will possess the following attributes and skills:
- Minimum 3 years as a Head Chef in a high-volume venue
- Committed to the best standards of food preparation and service
- Clear evidence of food vision and menu ownership
- Strong commercial instincts, not just cost awareness
- Proven experience leading through pressure, peaks and complexity
- Confidence to make decisions and stand by them
- Excellent leadership with proven experience in leading large teams to support a thriving kitchen culture
- Leadership credibility that teams respect, not resist and the ability to mentor and bring the best out of your team
