The Role
We're looking for an experienced and passionate Head Chef to lead the culinary operation across Kings Canyon Bar & Grill. This is an outstanding opportunity for an already established Head Chef or an experienced Senior Sous Chef ready to step up. You will have the autonomy to shape menus, lead a talented team and influence the direction of our food offering while working closely with the Food & Beverage Manager to continually enhance the guest experience. This is a hands-on leadership role, with most of your time dedicated to leading and developing your team, driving menu innovation, rostering and managing kitchen operations, while remaining actively involved in service and supporting your team on the line when needed.
Key responsibilities will include but are not limited to:

Lead all kitchen operations, ensuring exceptional food quality, presentation and consistency across multiple dining venues.

Develop innovative seasonal menus, recipes and costings while maintaining profitability and showcasing quality local produce.

Manage food costs, purchasing, inventory, stock control, labour budgets and kitchen administration.

Lead, coach and inspire the culinary team through hands-on mentoring, rostering, recruitment and skills development.

Work collaboratively with the Food & Beverage Manager and other departments to deliver exceptional guest experiences and achieve business objectives.

Maintain the highest standards of food safety, hygiene and workplace health and safety compliance.
Skills & Experience
-
Either a degree, Tafe or tertiary qualification or cert III 3 in Commercial Cookery (essential)
- Food Safety Supervisor certification (essential)

Previous experience as a Head Chef, or an accomplished Senior Sous Chef ready to take the next step.

Experience in remote hospitality, resorts, islands, mining camps or other high-volume operations will be highly regarded.

Experience leading high-volume kitchen operations with strong commercial acumen.

Demonstrated experience in menu development, food costing, budgeting and stock management.

Strong leadership skills with a genuine passion for mentoring and developing high-performing teams.

Excellent organisational, communication and stakeholder management skills.

Current Driver's Licence.
