Full Job Description

HOLA MEXICO is seeking an experienced and highly skilled Chef to join our culinary team in Frankston. We are looking for a professional who demonstrates strong technical ability, creativity, leadership, and a commitment to delivering exceptional dining experiences.

Key Responsibilities

Plan, design, and develop menus, including seasonal and specialty dishes, ensuring variety, nutritional balance, and cost efficiency.
Estimate food and labour costs, manage portion control, and contribute to budgeting and cost‑minimisation strategies.
Prepare, cook, and present dishes across multiple sections of the kitchen to a consistently high standard.
Supervise and coordinate food preparation activities, ensuring efficient workflow and timely service during peak periods.
Monitor quality at all stages of food preparation, cooking, and presentation to maintain brand standards.
Train, mentor, and oversee Cooks and Kitchenhands, providing guidance on cooking techniques, food safety, and kitchen procedures.
Ensure compliance with food safety, hygiene, and workplace health regulations, enforcing standards and conducting regular checks.
Order, receive, and manage inventory of food supplies, ensuring stock levels meet daily production requirements.
Collaborate with management to develop new dishes, refine existing recipes, and support menu innovation.
Coordinate with front‑of‑house staff to ensure smooth communication and efficient service delivery.
Inspect, maintain, and report on kitchen equipment, ensuring safe and efficient operation.
Implement food preservation techniques, including freezing and storing items according to safety guidelines.
Participate in continuous improvement, identifying opportunities to enhance kitchen operations and customer satisfaction.

Required Skills and Experience

Minimum 2 years of full-time experience as a Chef in a fast-paced commercial kitchen.
Formal culinary qualifications (AQF Diploma, Advanced Diploma, or Associate Degree in Commercial Cookery) or equivalent professional experience.
Strong leadership, organisational, and time-management capabilities.
Ability to work under pressure while maintaining high standards of quality and consistency.
Experience with Mexican cuisine is highly regarded.
Excellent understanding of food safety, HACCP principles, and kitchen hygiene regulations.
