Workers Hubertus located next to the new Western Sydney International Airport in Luddenham, is looking for an experienced and passionate Sous Chef to join our kitchen team and play a key role in delivering high-quality food across our day-to-day operations and growing functions and events business.
This is an exciting opportunity for a hands-on chef who enjoys creating great food, developing menus, leading a team and contributing to the growth of a busy hospitality operation.
Working closely with the Venue Operations Manager, you will help drive kitchen standards, menu innovation, food quality and cost control while supporting the development and growth of our functions offering.
About the Role
As Sous Chef, you will be responsible for supporting the day-to-day operation of the kitchen while leading and developing the kitchen team.
Your key responsibilities will include:

Prepare and cook a variety of high-quality dishes in accordance with menus, recipes and presentation standards.

Support the Operations Manager with the development and growth of the functions and events business.

Design and develop function menus that meet client requirements, seasonal trends and budget expectations.

Prepare accurate menu costings and assist with maintaining food cost targets and budget guidelines.

Develop creative and appealing daily specials using seasonal and locally available ingredients.

Create and update menus, incorporating current food trends, customer preferences and commercial considerations.

Lead, supervise, train and support kitchen team members to maintain high standards of performance and teamwork.

Oversee food preparation and presentation, ensuring consistency, quality and portion control across all dishes.

Monitor food quality and ensure dishes are produced and presented to the required standard.

Assist with ordering and monitoring food stock levels, minimising waste and maintaining appropriate stock rotation and monthly kitchen stocktake.

Ensure effective cost control, including portion control, food wastage and appropriate use of ingredients.

Maintain high standards of cleanliness, hygiene and organisation throughout food preparation, storage and service areas.

Conduct regular food safety checks and ensure all required records and documentation are completed accurately and maintained.

Ensure compliance with food safety, WHS and organisational policies and procedures.

Work collaboratively with the wider hospitality team to deliver excellent service and memorable dining and functions experiences.

Assist with the smooth operation of the kitchen during busy service periods, including functions, events and peak trading periods.
What We Need From You
We are looking for a motivated and commercially minded Sous Chef who can combine strong culinary skills with leadership and operational experience.
You will ideally have:

Proven experience as a Sous Chef, in a commercial kitchen environment.

Experience leading, supervising and training kitchen team members.

Strong knowledge of kitchen operations, menu planning, recipe development and food presentation.

Experience developing function and event menus, including menu costings, is highly desirable.

An understanding of food costs, portion control, stock management and waste reduction.

Sound knowledge of food safety and WHS principles.

Strong communication and interpersonal skills.

Excellent time management and the ability to remain calm and organised under pressure.

A creative approach to food and an interest in current food trends and seasonal ingredients.

A strong focus on quality, consistency and customer satisfaction.

Impeccable personal hygiene and professional presentation.

The ability to work both independently and as part of a collaborative kitchen team.

A positive attitude and willingness to contribute to the ongoing improvement and growth of the kitchen operation.

Flexibility to work across a 5-day roster (Wednesday – Sunday), including weekends, evenings, split shifts and public holidays.

A relevant qualification in Commercial Cookery, Food Safety Supervisor and Provide First Aid
