CHEF DE PARTIE – Catseye Pool Club by Josh and Julie Niland / Hamilton Island

Hamilton Island is looking for a skilled and experienced Chef de Partie to join the culinary team at Catseye Pool Club, a premium seafood-focused venue within our boutique hotel, The Sundays. Created in partnership with award-winning chefs Josh and Julie Niland—of Sydney’s acclaimed three-hatted restaurant Saint Peter—this is a rare opportunity to develop your career in a forward-thinking kitchen while living in tropical paradise.

Your Role

As Chef de Partie, you will be responsible for running your own section of the kitchen, preparing high-quality, seafood-focused dishes that reflect the Nilands' pioneering culinary philosophy. You’ll contribute to the execution of a dynamic menu, mentor junior team members, and ensure service runs with efficiency, precision, and consistency.

Where you’ll make an impact

Oversee and manage a kitchen section (e.g. fish, grill, larder) during service
Prepare mise en place and execute dishes to exacting standards
Work closely with Sous and Head Chefs to deliver daily and seasonal menus
Mentor and assist in training Commis and Demi Chefs
Maintain strict food safety, hygiene, and cleanliness protocols
Assist with inventory, prep lists, and section organisation
Participate in special event prep and service where required

What we’re looking for

You’re an experienced, reliable, and detail-focused chef who thrives in high-end, fast-paced kitchens. You're passionate about seafood, innovation, and being part of a collaborative team that values creativity, consistency, and sustainability.

To be successful, you will need:

Certificate III in Commercial Cookery (Essential)
Minimum 2–3 years' experience as a Chef de Partie or strong Demi Chef
Proven experience running your own section in a premium or high-volume venue
Passion for seafood and an understanding of whole-fish and sustainable cookery
Strong organisational and mentoring skills
Ability to work varied shifts including early mornings, evenings, weekends, and events
Valid working rights in Australia
Manual open driver’s licence (preferred)
