About the role

Hungry Italiano Terrigal, formerly Hungry Wolf’s Terrigal, is seeking an experienced and capable Sous Chef to join our busy Italian restaurant kitchen.

This is a hands-on leadership position supporting the Head Chef with daily kitchen operations, food preparation, service coordination, staff supervision and maintaining consistently high standards.

We are looking for a reliable culinary professional with strong experience in Italian and Mediterranean cuisine who can confidently lead the kitchen when the Head Chef is unavailable.

Key responsibilities

Support the Head Chef with the daily operation of the kitchen.
Prepare and cook Italian and Mediterranean dishes to a consistently high standard.
Supervise food preparation, cooking, plating and presentation.
Coordinate kitchen service and ensure orders are prepared accurately and efficiently.
Lead, train and support chefs, cooks and kitchen attendants.
Allocate kitchen duties and coordinate staff across all sections.
Assist with menu development, recipes, portion specifications and presentation standards.
Monitor the quality and freshness of ingredients and finished dishes.
Assist with ordering, stock rotation, storage and inventory control.
Monitor food costs, portion control, wastage and kitchen productivity.
Maintain kitchen equipment and report any maintenance or safety issues.
Ensure the kitchen complies with food-safety, hygiene and workplace-safety requirements.
Complete opening, closing and cleaning procedures.
Take responsibility for kitchen operations when the Head Chef is unavailable.

About you

At least three years of relevant commercial cookery experience.
Relevant commercial cookery qualifications or equivalent professional experience.
Demonstrated experience as a Sous Chef, Senior Chef de Partie or experienced Chef in a busy restaurant.
Strong knowledge of Italian and Mediterranean cooking techniques.
Experience with pizza, fresh pasta, sauces, meat, seafood and high-volume à la carte service.
Proven ability to supervise, train and organise a kitchen team.
Good understanding of food costing, stock control, portion control and waste management.
Sound knowledge of Australian food-safety and workplace-safety requirements.
Ability to remain calm, organised and hands-on during busy services.
Strong communication, reliability and time-management skills.
Availability to work a rotating roster, including evenings, weekends and public holidays.
