Key Responsibilities
- Prepare and cook a variety of authentic Italian dishes, including pasta, pizzas, risottos, seafood, meat dishes, desserts, and other menu items in accordance with established recipes and quality standards.
- Prepare ingredients by washing, cutting, portioning, marinating, seasoning, and organising food items before service.
- Operate commercial kitchen equipment, including ovens, grills, cooktops, pizza ovens, fryers, and other cooking equipment safely and efficiently.
- Monitor cooking processes, ensuring correct cooking times, temperatures, presentation, and portion control.
- Maintain consistency in food quality, flavour, and presentation across all menu items.
- Prepare sauces, stocks, dressings, pasta, pizza toppings, and other components required for daily kitchen operations.
- Assist with daily mise en place and ensure kitchen readiness before service.
- Maintain cleanliness and organisation of kitchen workstations, equipment, storage areas, and food preparation areas.
- Follow all food safety, hygiene, sanitation, and workplace health and safety requirements.
- Monitor stock levels, rotate stock appropriately, minimise food wastage, and report inventory requirements.
- Assist with receiving and storing deliveries in accordance with food safety procedures.
- Work collaboratively with chefs, kitchen staff, and front-of-house employees to ensure efficient service during busy periods.
- Assist with menu development, seasonal specials, and continuous improvement of food quality.
- Support and assist in training junior kitchen staff and maintaining high kitchen standards.
Qualifications & Experience
- Certificate IV in Commercial Cookery or an equivalent qualification.
- Diploma of Hospitality Management or a related qualification is desirable.
- Minimum 1 year of experience working as a Cook or in a similar commercial kitchen environment.
- Experience in Italian restaurants or preparing authentic Italian cuisine is highly regarded.
- Strong knowledge of pasta, pizza, sauces, meat, seafood, and traditional Italian cooking techniques.
- Sound understanding of food preparation methods, commercial kitchen operations, and cooking equipment.
- Strong knowledge of food safety standards and safe food handling practices.
- Ability to work efficiently under pressure during busy lunch and dinner services.
- Excellent teamwork, communication, and organisational skills.
- High attention to detail and commitment to maintaining consistent food quality.

- Availability to work flexible hours, including evenings, weekends, and public holidays.
