ABOUT THE ROLE:
This is your chance to join the team at the ALBERT PARK HOTEL in Melbourne VIC as part of Morris Hospitality.
The Albert Park Hotel is an iconic Melbourne hotel/pub establishment that has been in operation for over 140 years. Having undergone a major upgrade in 2020, the venue now includes the main pub/bar, a stylish cocktail lounge and several private dining/function spaces.
The centrepiece of the Albert Park Hotel is the Happy Valley restaurant. Sourcing the freshest produce from local suppliers, the restaurant provides a wide range of modern-Chinese classics and banquet dining for groups, with centuries of tradition behind every bite.
Morris Hospitality is seeking talented culinary staff for a range of chef positions across all our venues in Melbourne.
Available roles include:
- Chef de Partie
- Senior Chef de Partie
- Junior Sous Chef
- Sous Chef
All chef roles will be responsible for assisting with leading and managing the kitchen, menu design and recipe creation, WHS and food safety compliance, helping to train/develop junior kitchen workers, mis-en-place, quality control of all food production, and maintaining consistent delivery of high standards through every service.
Full-Time Salary: $75,000-$95,000 depending on the role & experience
ABOUT YOU:
To be considered for a Chef position with Morris Hospitality, you will need to demonstrate the following:
- Trade qualifications
- Minimum 2-3 years' experience in a comparable role for the eligible position
- Experience in similar-style venue
- Experience with similar cuisines & culinary styles (e.g. meat/protein, Chinese cuisine)
- Experience with sourcing fresh local produce
- Demonstrated ability to create new menu ideas & assist with menu preparation
- Ability to work collaboratively in a high-energy kitchen
- Ability to multi-task & maintain 5-star standards of quality & service
- Strong understanding of produce, culinary techniques & kitchen equipment
- Ability to work in a fast-paced, high-volume environment
- Keen eye for detail & a passion for creating visually appealing & delicious dishes
- Keen interest & passion for keeping up-to-date with industry trends
- A working understanding of & ability to maintain food safety & HACCP
- Experience developing & training junior staff
- Excellent communication skills
- Flexibility to work various shifts including weekends, nights & public holidays
Applicants for more senior positions as Junior Sous / Sous Chef will also need to demonstrate the following:
- Minimum 2+ years' experience as senior chef
- Substantial experience in cookery & kitchen management
- Experience in progressive leadership roles within the kitchen team
- Advanced knowledge of culinary principles & practices
- Ability to plan & resource people/products
- Experience in cost control of goods, labour costs & kitchen operating expenses
- Ability to keep up with current food trends
- Experience in staff performance management
- Proven experience in the administration of food promotions to drive revenue
- Forward-planning & decision-making skills
- Leadership & management skills
