Prepare and produce high-quality dishes in accordance with standard recipes and guest expectations
Manage and oversee your designated kitchen section, ensuring consistency, quality, and efficiency
Work across a variety of outlets including restaurant dining, in-room dining, Club Lounge, staff dining, and banqueting operations
Support and mentor Demi Chefs, Commis Chefs, Cooks, and Stewards in their development
Deliver exceptional culinary experiences through presentation, flavour, and attention to detail
Assist with menu preparation, food styling, promotions, and culinary activations
Monitor and maintain food stock levels to support business demands and occupancy forecasts
Assist with ordering, stock rotation, inventory management, and stocktakes
Contribute to controlling food costs and minimising waste while maintaining quality standards
Maintain high standards of cleanliness, food safety, and HACCP compliance throughout all kitchen operations
Ensure all food preparation and storage procedures comply with hotel standards and legislative requirements
Support a positive, engaged, and collaborative kitchen culture
Report hazards, incidents, maintenance issues, and equipment faults in accordance with WH&S requirements
Complete additional duties as required to support the smooth operation of the culinary team
Qualifications in Commercial Cookery or Culinary Arts
Previous experience as a Demi Chef looking to progress, or experience in a Chef de Partie role
Passion for food, creativity, and delivering exceptional dining experiences
Experience working in a hotel, restaurant, or high-volume kitchen environment
Knowledge of a range of cuisines, with modern Australian and contemporary dining experience highly regarded
Strong organisational skills and the ability to prioritise tasks in a fast-paced environment
Excellent communication skills and a collaborative approach to teamwork
Strong attention to detail and commitment to culinary excellence
Knowledge of food safety, HACCP, and kitchen hygiene standards
Commitment to maintaining high grooming, hygiene, and presentation standards
Flexibility to work a rotating roster, including evenings, weekends, and public holidays
