Chef de Partie – Restaurant & Bar, Pre-opening

About 1 Spring Sky Lounge

Located within the Capital Square precinct above Elizabeth Quay, our Sky Lounge offers breathtaking 360° views of Perth's city skyline and the Swan River, creating one of the city's most exciting dining destinations.

As we prepare to open, we are seeking a passionate and skilled Chef de Partie to join our founding kitchen team and help bring this exceptional venue to life.

About the Role

Reporting to the Sous Chef, you will be responsible for the preparation, cooking and presentation of high-quality dishes within your allocated section.

You will work closely with the kitchen team to ensure smooth service, consistent quality, excellent food safety standards and a positive, collaborative kitchen culture.

Key Responsibilities

Support pre-opening kitchen setup, training, menu tastings and service trials.
Prepare, cook and present dishes to agreed recipes, quality standards and presentation requirements.
Take ownership of your allocated kitchen section during service.
Maintain strong mise en place, organisation and cleanliness throughout each shift.
Ensure food is prepared and stored in accordance with food safety and hygiene requirements.
Assist with stock rotation, ordering, stocktakes and waste minimisation.
Support the Sous Chef with daily kitchen operations and service delivery.
Train and support junior kitchen team members when required.
Maintain equipment, work areas and personal presentation to high standards.
Follow all food safety, WHS and operational procedures.

The Successful Candidate Will Possess

· Previous experience as a Chef de Partie or strong Demi Chef de Partie in a quality restaurant, hotel or premium dining environment.

Sound knowledge of modern cooking techniques, food preparation and kitchen operations.
Ability to confidently manage a section in a fast-paced service environment.
A strong focus on quality, consistency, presentation and attention to detail.
Understanding of food safety, hygiene and WHS requirements.
Strong teamwork, communication and time-management skills.
A positive, reliable and hands-on approach.
Relevant commercial cookery qualifications are highly regarded.
