About the Role
Reporting to the Head Chef and Sous Chef, the Sandwich & Kitchen Hand will play an integral part in the Carlton Football Club’s 1864 Café & Events space. Working in the Club’s Food and Beverage Team, you will be assisting with food preparation as well as ensuring that the kitchen runs smoothly and is well-maintained.
As a Sandwich & Kitchen Hand, you will be highly organised and have a strong attention to detail. The role will require you to understand the importance of kitchen safety and hygiene standards, and to work diligently to ensure that the kitchen space and equipment is clean, sanitised, and organised.
Key Responsibilities
- Preparation of sandwiches, toasties and the Eatery’s cabinet display, including the rotation of stock and control of daily salad and pastries as per the direction of the Chefs
- Ensure a high level of cleanliness, sanitization and hygiene in the kitchen and BOH areas (including Goods Receival and Stores)
- Responsible for the washing of all crockery, cutlery, pots, pans, and kitchen equipment as directed by the Chefs
- Maintain all kitchen floors and cleaning equipment, including commercial dishwasher, mops, brooms, etc.
- Assist the Chefs with stock control through the rotation of incoming and outgoing stock in the kitchen and BOH areas
- Undertake compliance procedures to ensure food safety, including fridge temperature checks, the use of probe and laser thermometers, and logging of relevant reporting
- Provide basic food preparation assistance to the Chefs as directed
- Operate and execute the service of the pass in the café space
Experience, Skills and Attributes
- Prior kitchen experience, particularly in a café and/or function environment
- Understanding of the importance of kitchen safety and hygiene standards
- Completion of Food Handling and Hygiene Certificate preferred
- Desire and willingness to learn
- Have high attention to detail
- Excellent organisational skills
- Positive and team-oriented attitude
- Knowledge of, and alignment with, the Carlton Football Club’s values
- Ability to work flexible hours in keeping with venues operational hours
