Padre Brewery Co. is a microbrewery and hospitality venue offering craft beer alongside a substantial food service operation. The kitchen supports regular dine-in trade as well as private parties, group bookings and events, requiring consistent food quality across both made-to-order service and higher-volume function catering. The venue also places importance on accommodating patrons’ dietary needs, including vegetarian, gluten-free and other customised meal requests, while carefully managing food allergies, ingredient substitutions and cross-contamination risks.
- Take responsibility for an assigned kitchen section during daily service, private functions and events, ensuring preparation, cooking and presentation are completed to the venue’s required standards.
- Prepare and cook a broad range of gourmet and casual dining dishes, including pizzas, burgers, grilled meats, seafood, chicken, tacos, salads and other made-to-order menu items.
- Prepare fresh ingredients, toppings, garnishes and house-made sauces, including pizza, pesto, buffalo, béchamel, barbecue and blue cheese sauces.
- Organise and complete daily mise en place for the assigned section, ensuring all ingredients, sauces, garnishes and prepared components are ready before service.
- Prepare customised meals to suit patrons’ dietary requirements, including vegetarian, gluten-free and other special requests, while carefully following food allergy and cross-contamination procedures.
- Coordinate section preparation for private parties, group bookings and events, taking into account guest numbers, approved menus, service timing and any specific dietary requirements.
- Operate ovens, grills, fryers and other commercial cooking equipment, controlling cooking temperatures, timing and preparation methods to maintain consistent food quality.
- Monitor the quality, portioning, presentation and consistency of dishes prepared within the section before they are released for service.
- Adjust preparation and cooking priorities during busy service periods to maintain timely food delivery and support smooth kitchen operations.
- Assist with the preparation and execution of event and function menus, including higher-volume food production while maintaining presentation and quality standards.
- Monitor ingredient usage and stock levels within the section and identify replenishment requirements to avoid shortages during service.
- Check food deliveries for freshness, quality and suitability and ensure ingredients are stored, labelled and rotated correctly.
- Support junior kitchen staff by providing practical guidance on food preparation, cooking methods, presentation, food safety and section procedures.
- Work closely with the Head Chef, Sous Chef and other kitchen staff to coordinate service, manage workflow and address operational issues as they arise.
- Maintain accurate awareness of menu ingredients and preparation methods so that patron questions relating to allergens, dietary restrictions and ingredient substitutions can be handled appropriately.
- Ensure all food is prepared, stored and handled in accordance with food safety, hygiene, allergen-management and workplace health and safety requirements.
- Maintain a clean, organised and hygienic workstation throughout preparation and service and ensure cooking equipment and kitchen areas are properly cleaned and sanitised after use.
Qualifications & Experience
The successful applicant will ideally have:
- Relevant commercial cookery qualification, such as Certficate III or IV in Commercial Cookery, or an equivalent qualification
- Atleast 12 months of full time experience working as a Chef in a commercial kitchen
- Experience working in a busy restaurant or hospitality environment
- Sound knowledge of food prepara&on, cooking techniques and kitchen operations
- Knowledge of food safety and hygiene requirements
