Key Responsibilities
This is a senior leadership opportunity for an experienced Food & Beverage professional ready to take on a multi-property role. Working across Rydges Port Macquarie, you’ll develop our leaders, elevate service standards and drive commercial performance, backed by significant owner investment in the property.
- Mentor, coach and develop Food & Beverage leaders across both properties through structured development plans and regular performance conversations.
- Identify high-potential team members and build succession pathways for future hospitality leaders.
- Design onboarding programs and review SOPs and service standards to embed a culture of learning and continuous improvement.
- Drive operational excellence across restaurants, bars, conferences, events and in-room dining, including quality assurance audits and WHS, food safety and liquor licensing compliance.
- Lead the development of exceptional guest service standards, analysing feedback and embedding effective service recovery processes.
- Partner with venue leaders to achieve budgeted revenue and profit targets, driving beverage profitability and menu engineering initiatives.
- Monitor labour, COGS and departmental profitability, identifying opportunities to improve labour productivity and operational efficiency.
- Partner closely with both General Managers and departmental leaders, providing monthly reporting on people, guest and commercial performance.
- Support promotional planning with Marketing and Sales teams, and identify new revenue opportunities across all Food & Beverage channels.
- Support EVT and THH supplier partnerships and maximise local procurement opportunities where appropriate.
What You’ll Bring
- Minimum 5 years’ senior Food & Beverage leadership experience within hotels, resorts or premium hospitality venues.
- A demonstrated track record developing leaders and building high-performing teams.
- Proven ability to lift service standards and operational performance across venues.
- Strong financial and commercial acumen, with experience managing labour, revenue and cost control metrics.
- Executive Chef background or multi-outlet hotel Food & Beverage experience highly regarded.
- A hands-on, coaching-led leadership style, with high visibility across venues and strong emotional intelligence.
- Strong communication skills and guest-centric mindset.
