Venue Manager – Specialty Coffee & Cocktail Bar

A new kind of hospitality experience is coming to George Street.
We're creating a venue where specialty coffee is at the heart of everything we do, evolving from a vibrant daytime café into an intimate evening destination.
Coffee won't simply be one part of the offering — it will be the foundation of the venue.
From the quality and presentation of every coffee, to the way we educate our team and create the guest experience, we're looking for someone who genuinely understands specialty coffee and has the experience and passion to make it the hero.
We're looking for an experienced coffee-led hospitality manager to bring this vision to life from day one.
The Opportunity
This is an opportunity to build something from the ground up.
As Venue Manager, you'll lead the day-to-day operation while establishing the coffee culture, service standards and team culture that will define the venue.
You'll work closely with our coffee team to ensure specialty coffee is consistently delivered at an exceptional level, while also overseeing the evening bar operation and the broader commercial performance of the venue.
You'll be responsible for:
- Leading the daily café and evening operation
- Championing specialty coffee and maintaining exceptional coffee standards
- Ensuring coffee quality, presentation and service are consistently at the highest level
- Recruiting, training and developing a strong coffee and hospitality team
- Building a coffee-focused culture where knowledge, technique and quality are valued
- Hiring and mentoring your leadership team and Bar Managers
- Establishing systems, processes and service standards from the ground up
- Managing labour, costs, stock and key business KPIs
- Working with the coffee and beverage teams on menu development and product evolution
- Creating an exceptional guest experience across both day and evening trade
- Maintaining high standards across food safety, beverage quality and service
About You
Coffee comes first.
We're looking for someone who has a genuine background in specialty coffee and is comfortable operating in a high-level coffee environment.
You may come from a café management, specialty coffee, coffee training, restaurant or premium hospitality background — but strong specialty coffee experience is essential.
You'll bring:
- Proven experience managing a specialty coffee café, coffee-focused venue or premium hospitality operation
- Strong specialty coffee knowledge and hands-on experience
- Confidence discussing coffee, extraction, equipment, quality and presentation with both customers and team members
- A genuine passion for specialty coffee and the ability to inspire that passion in others
- Experience recruiting, training and developing high-performing teams
- Strong leadership and communication skills
- Commercial understanding of labour, COGS, stock, budgets and KPIs
- A hands-on management style and willingness to lead from the floor
- Experience across beverage or bar operations is highly desirable
- Creativity, initiative and a passion for building something new
- Flexibility to work across day and evening trade
- Availability to work at least one weekend day as part of your regular roster
