About the Business
India Gate on the Bay is an established restaurant located on the Esplanade in Scarness, Queensland, offering a diverse menu featuring Indian, Nepalese and Modern Australian cuisine.
As part of the continued growth and expansion of the business, the restaurant is planning to extend its trading operations to seven days a week, providing both lunch and dinner services. To support these expanded trading hours and maintain consistent food quality and kitchen operations across all services, we are seeking an experienced and suitably qualified Head Chef to join our team on a full-time basis.
About the Role
The Head Chef will be responsible for leading and coordinating the kitchen operations, maintaining high standards of food quality and presentation, supervising kitchen staff, and ensuring efficient food preparation and service across lunch and dinner operations.
The successful candidate must have strong practical experience preparing Indian, Nepalese and Modern Australian cuisine and the ability to manage a busy commercial kitchen.
Key Duties and Responsibilities
- Plan, develop and regularly review menus featuring Indian, Nepalese and Modern Australian cuisine.
- Prepare, cook and present high-quality dishes in accordance with established recipes and restaurant standards.
- Manage and coordinate daily kitchen operations across lunch and dinner services.
- Supervise, train and provide guidance to chefs, cooks and other kitchen staff.
- Allocate duties and coordinate kitchen workflow to ensure efficient and timely food service.
- Monitor the quality, taste, presentation and portioning of dishes before service.
- Develop and maintain recipes and ensure consistency in food preparation and presentation.
- Estimate food requirements and manage ordering, stock levels and inventory.
- Monitor food costs, portion control and wastage to assist with maintaining kitchen profitability.
- Inspect ingredients and supplies to ensure appropriate quality and freshness.
- Maintain appropriate stock rotation and storage procedures.
- Ensure compliance with food safety, hygiene, sanitation and workplace health and safety requirements.
- Maintain cleanliness and organisation of kitchen, food preparation and storage areas.
- Coordinate with restaurant management and front-of-house staff to ensure smooth service operations.
- Assist management with planning kitchen staffing requirements for the restaurant's expanded seven-day lunch and dinner operations.
Essential Requirements
Applicants must have:
- A relevant qualification in Commercial Cookery (Certificate III, Certificate IV or higher/equivalent qualification).
- A minimum of two years of relevant experience working as a Chef in a commercial restaurant environment.
- Demonstrated practical experience preparing and cooking Indian, Nepalese and Modern Australian cuisine.
- Strong knowledge of commercial kitchen operations, food preparation techniques and food safety requirements.
- Proven ability to supervise and coordinate kitchen staff.
- Strong organisational and time-management skills.
- Ability to maintain consistent food quality and presentation during busy service periods.
- Ability to work effectively across lunch and dinner services, including weekends and public holidays as required.
